Reverse-Seared Pork Chops with Hot-Honey Mustard Glaze

Thick bone-in chops brought up gently on the smoker, then hard-seared and lacquered with a glossy hot-honey mustard glaze. Even, rosy, juicy — with a real char.

Ingredients
  • bone-in pork chops, 1.5 in+ thick, rib or center-cut4
  • kosher salt2 tsp
  • black pepper, freshly ground1 tsp
  • neutral oil1 tbsp
  • honey3 tbsp
  • Dijon mustard2 tbsp
  • soy sauce1 tbsp
  • garlic clove, grated1
  • cider vinegar1 tbsp
  • chili flakes½ tsp
  • unsalted butter1 tbsp

    Pat the chops dry and season all over with the salt and pepper. Set on a rack over a sheet pan and rest uncovered in the fridge — 1 hr minimum, up to 24 hr.

    Whisk honey, Dijon, soy, grated garlic, cider vinegar, and chili flakes in a small saucepan and warm over medium 2 min until glossy. Off heat, stir in the butter until it emulsifies. Reserve half for serving.

    Set your Masterbuilt 1080 to ~250°F. Cook the chops until the internal temp reads 120°F, about 25–40 min depending on thickness.

    Rest the chops 5 min while you rip the grill to 450°F+. Pat dry and rub with the oil.

    Sear over direct heat, undisturbed, 1–2 min per side until well charred. Hold fat-edge-down with tongs to crisp the fat cap. In the last minute, brush on the reserved glaze and flip often to lacquer. Pull at 140°F.

    Rest 5 min, loosely tented — carryover brings them to a safe, juicy 145°F. Serve with the reserved glaze.
