Cilantro-Lime Rice with Toasted Cumin and Crispy Onions

    Make the crispy shallots first so they are ready to garnish. In a small saucepan, combine the sliced shallots and the 1/2 cup neutral oil over medium-low heat. Cook, stirring occasionally, until the shallots turn deep golden-brown and crisp, 18–22 minutes — watch carefully in the final minutes as they darken fast. Use a slotted spoon to transfer them to a paper-towel-lined plate; they will crisp further as they cool. Season immediately with flaky sea salt. Reserve the shallot oil.

    While the shallots cool, toast the rice. In a medium heavy-bottomed saucepan or sauté pan with a tight-fitting lid, heat 1 tbsp neutral oil and 1 tbsp of the unsalted butter over medium heat. Add the whole cumin seeds and toast until fragrant and lightly darkened, about 60–90 seconds, stirring constantly. Add the drained basmati rice and the minced garlic; stir to coat every grain in the fat. Continue toasting, stirring frequently, until the rice smells nutty and turns faintly golden, about 3 minutes.

    Add the water or chicken stock and kosher salt to the rice; stir once to combine and scrape up any toasted bits. Bring to a vigorous boil over high heat, then immediately reduce to the lowest possible simmer, cover tightly, and cook undisturbed for 14 minutes.

    Remove the pan from heat and, without lifting the lid, let the rice steam off heat for 10 minutes. This passive rest finishes cooking the top layer and yields separate, fluffy grains.

    Uncover the rice and add the remaining 1 tbsp unsalted butter, fresh lime juice, and lime zest. Using a fork, gently fluff the rice — avoid stirring aggressively — to separate the grains and work in the butter and citrus. Fold in the chopped cilantro. Taste and adjust with additional lime juice or kosher salt as needed.

    Transfer the rice to a warm serving bowl or plate it family-style. Scatter the crispy shallots generously over the top just before serving so they retain their crunch. Drizzle a small spoonful of the reserved shallot oil over the rice if desired for extra richness.
