Cilantro Lime Rice

Ingredients
  • long-grain white rice, rinsed2 cups
  • chicken broth3 cups
  • salt1 tsp
  • bay leaf1
  • garlic clove1
  • unsalted butter1 tbsp
  • lime zest2 limes
  • fresh lime juice3 tbsp
  • fresh cilantro, chopped½ cup
  • unsalted butter, for finishing1 tbsp
Method

    Add the rinsed long-grain rice, chicken broth, salt, bay leaf, garlic clove, and 1 tbsp butter to the rice cooker. Cook on the standard white rice cycle.

    When the rice is done, remove the bay leaf and garlic clove. Fluff the rice and fold in the lime zest, lime juice, cilantro, and remaining 1 tbsp butter. Serve immediately.
